The restaurant within this restaurant takes advantage of the popularity of the pizza, which the chef, Justin Smillie, is making in Il Bucho Elementary and Vinaria. Available for takeout and delivery only, there are seven varieties, including the traditional Margherita, and the more inventive Caccio e Pepe; Kell and Anchovy; And green chorizo with green onion, pepperoncini, mozzarella and provolone. A chopped chikori salad with crispers and peppers and crispy putneska wings are also sold. (Opens on Wednesday)

Hachi Maki
The location is a revolving door, on Columbus Avenue near 85th Street, among the convenors at the locations of Jeremy Vladis on the upper west side. Now Mr. Vladis, who installed outdoor seating for a bowl of ramen in front of the restaurant three weeks ago, is opening it with an open-facing maki, four types of ramen and indoor seating for Japanese-style snacks. Sushi chef and partner, Max Zumwalt, is in charge.

1245 Broadway
It is a 23-story office building, where vegetarian chef Matthew Kenny will set up his new flagship restaurant, as yet unnamed next year. It will be on the ground floor and lower level of the building. In addition to the plant-based fine dining, the 7,900-square-foot complex will feature more informal choli-style restaurants. Mr. Kenny will handle the catering for the building and run an event space on the campus.

Hermitage Hotel
Jean-George Vongrichsen will oversee everything Pak at the National-Historic Landmark Nashville Hotel. A new restaurant, with extensive arches and thick columns, designed by Thomas Junells-Hansen, who has done other restaurants for Mr. Vongerichten, is scheduled to open in the fall. There will also be a new cafe. Both restaurants will include seasonal and regional fare.

Marigold flower
The restaurant, another southern project for Jean-Georges Vongerichten, will take place at Kelswick Hall, in Kellwick, Va., Near Charlottesville, the inn in the final stages of renovations before a spring opening. Mr. Vongerichten will be the consulting chef. The opening will be for the five-acre farm of the property starting in time for the farm and kitchen supplies.
